- 300g Dessicated Coconut
- 2 tsp coconut oil
- 1 tsp water
- 1/2 tsp Maldon Salt
You may not be familiar with coconut butter but it’s soooo easy to make, and a great alternative to peanut butter if you have allergies. I love mine slightly salted on toast in the mornings but it also tastes great on rye bread or in a smoothie. You simply blend the desiccated coconut (as you would peanuts for peanut butter) in a Food Processor et voila! Even my Health-Food Cynical/Coconut hating boyfriend lapped it up.
Add all ingredients to a Food Processor and blend for 15-20 minutes... Remember to stop occasionally and scrape the sides.
After around 10 minutes it should resemble wettish flour, but this will eventually become a smooth paste which resembles peanut butter in consistency. NOTE: It will still have small grains of coconut and not be as creamy as butter.
