- 75g Coconut Butter
- 500g Coconut Cream (Light if possible)
- 1tsp Vanilla extract
- 50g Coconut flakes
- 100g Dried Mango
- 1 tbs chia seeds
This coconut bark/brittle recipe is for serious coconut lovers. Normally “bark” is made from white chocolate but this recipe is purely made from coconut butter & coconut cream. Topped off with dried mangos and protein packed chia seeds it’s the perfect combo. It’s a great little sweet to nibble on first thing back from the gym…. You should keep these in the freezer to keep them firm and toss the chunks in your blender when you want to jazz up a simple smoothie.
Melt the coconut butter & coconut cream together in a glass bowl over simmering water (the same way you would melt chocolate.)
Spread mixture over a deep baking tray lined with parchment paper.
Sprinkle over chia seeds, coconut flakes and dried mango.
Freeze for an hour and remove, use a rolling pin to break into pieces.
